Everybody has a cholesterol opinion. Eggs are back. Eggs are out. Butter is fine now. Butter was never fine. Somebody's uncle lowered his LDL by 60 points on a diet made entirely of steak.
At Frozen Garden, we don't do food fights. We do real food, and we let the doctor handle the science. For this month's Doctor's Orders, we asked Dr. Greiner a common question people wonder about: can what you eat actually change your cholesterol, or is that just something people say?

In my last blog we talked about fiber and why counting grams of it is a losing game. This month I want to follow that thread somewhere specific, because fiber's best trick doesn't happen in your gut. It happens in your liver.
Let's talk about cholesterol.
First, cholesterol is not the villain
Every cell membrane in your body contains cholesterol. You make vitamin D from it. Your hormones and cortisol are built from it. Your liver turns it into bile acids so you can digest fat. If cholesterol disappeared tomorrow, so would you.
Your liver manufactures most of what you need. That’s why the dietary cholesterol panic of the 1980s didn’t pan out. The egg on your plate has much less to do with your blood level than the industry once assumed. Your liver adjusts.
So the problem isn't cholesterol. The problem is how it’s delivered.
The part that actually matters
Cholesterol doesn’t dissolve in blood, so it rides around in particles wrapped in protein. These are the values on your lipid panel when you get your lab drawn. LDL particles carry it out to your tissues. HDL particles carry the excess back to the liver. That’s the whole “bad” and “good” cholesterol thing. Carrying the same cholesterol, but one way is to the walls of your arteries and other is back to the liver’s parking lot. The body has to store it somewhere so if you have high cholesterol, the parking lot fills up and the body is going to put it somewhere and that somewhere is the walls of your artery, which is exactly where you don’t want it.
Here's the real mechanism. LDL “bad cholesterol” particles can slip into the wall of an artery, get stuck, and trigger an immune response. Your body sends immune cells to do the cleanup. They gorge on the cholesterol, die, and form a plaque. Repeat that over thirty years and you've built the thing that causes heart attacks and strokes.
The number that predicts this best isn't total cholesterol. It's the count of inflammatory particles measured as LDL-C, or better, non-HDL cholesterol (just total minus HDL, already on your lab report) or ApoB if your doctor orders it. ApoB counts the actual LDL particles, one protein per particle. Two people can have identical LDL-C with very different particle counts, and the one with more particles is at higher risk because more particles means more bumping into your artery walls. So it’s a numbers and probability game multiplied by time. The more ApoB particles filled with LDL cholesterol and the more likely they are to bump into your artery wall, get stuck, cause inflammation, and develop a sticky plaque, narrowing the artery that is feeding blood to your heart muscle. The more time, on the order of decades, that this probability game runs, the larger those plaques grow and eventually they can cause problems.
Ask for ApoB as part of your cholesterol panel. It costs almost nothing and tells you considerably more.
How food gets into this
Here's where it gets interesting, and where your food comes in.
Your liver dumps bile acids into your small intestine to help digest fat. Bile acids are made from cholesterol. Normally, your body is thrifty and reabsorbs about 95% of them downstream to use again.
Soluble fiber ruins that recycling program but in the best way. It forms a gel, traps bile acids, and escorts them out the back end. Your liver, now short on bile acids, has to make more. To make more, it needs cholesterol. So it pulls LDL out of your bloodstream to get it. Fewer LDL particles, less chance to get stuck in your arteries.
That's not a wellness slogan. That's a metabolic pathway, and it’s something to take advantage of.
The oat version has a name: beta-glucan. It’s the soluble fiber that makes oats gummy, and it has one of the better evidence bases in all of nutrition. Around 3 grams a day, roughly a cup and a half of cooked oats, a solid jar of overnight oats, a smoothie, or a nice grain bowl is associated with a meaningful drop in LDL over several weeks. Not cholesterol medicine sized reductions, but real, repeatable, and free of side effects.
Beans, lentils, barley, apples, citrus, berries, chia, flax, psyllium are all soluble fiber players. And they stack. This is the logic behind what doctors call the portfolio approach: no single food is doing the heavy lifting, but soluble fiber plus nuts plus plant sterols plus plant protein, eaten together and eaten consistently, adds up to something that shows up on a lab report.
The swap
Adding good things helps. Removing things helps more.
Saturated fat raises LDL, and what you replace it with determines what happens next. Swap it for refined carbohydrates and you’ve accomplished nothing. Swap it for unsaturated fats and fiber-rich whole foods and the number moves. So, keep an eye on nutrition labels, especially those protein bars!
Trans fats are worse because they raise LDL and lower HDL simultaneously. They are Largely gone from the food supply now but read labels on anything with a long shelf life.
And the one people are most surprised by: excess refined sugar and alcohol drive triglycerides, which drags your whole lipid picture in the wrong direction. That “healthy” smoothie from the drive-through with 54 grams of sugar isn’t helping your panel. Set your expectations honestly
Dietary changes typically move LDL in the range of 5–15%, sometimes more if you’re starting from a genuinely poor baseline and change several things at once. That’s a meaningful contribution to your lifetime risk. It is also not a substitute for medication if your risk is high or if you have familial hypercholesterolemia, where the driver is genetic and food alone will not get you there.
Give it 8 to 12 weeks and recheck. Lipids don’t turn around in a week, and one panel is a snapshot, not a verdict. The trend.
And the usual disclaimer 😊 If you’re on a statin or any lipid-lowering medication, do not stop it because your breakfast improved. Always talk to your physician when you are incorporating food changes into your diet. Food and medication are teammates here, not rivals.
This month's doctor's order: Stop arguing about eggs. Start eating soluble fiber at every meal and let your liver do the rest.
